I want to create EPR (electron paramagnetic resonance) graphs and the Y-axis needs to be completely hidden how do I do this?

If you mean the numbers along the Y axis, just right-click on any of those and select "None" for the number format.

If instead you mean the Y axis itself - the line - the only way to do that is to hide both X and Y. It's both or neither. If that will suit your needs, select Symbol/Line Styles on the Options menu and set the line widths for both the axes and grid lines to a negative number.

I'm not sure if this will suit your needs, but one thing you might try is to turn off both axes as described earlier, by setting the axis line width to -1, then adding a reference line (Options>Reference Lines) at Y=minimum Y value.
